This wood-aged Mexican cider is a culmination of years of hard work & discovery. All in a journey to Find the right combination of acids, tannins, warmth, mouthfeel, complexity, interest, dynamicness, & flavour. And like all our ciders it starts with fresh pressed juice
We use organic, Mexican, single origin, piloncillo oscuro. This builds up bold flavors like caramel, an earthiness, & an almost imperceptible charred-like characteristic.
The American oak gives complex notes of warming amber vanilla, a coconut like freshness, & a tobacco leaf subtlety.
This cider is designed to create interest in what cider can be with the right care, attention to detail, & showcase the artistry that can be captured with a singular goal & focus in mind.
